A friend recently asked me for the recipe for this soup. It's super tasty but, as always, don't take my word for it. Just try it!!
I didn't think quickly enough to take a photo of the soup in a bowl that looked yummy but as you can see we hardly left a drop in the bottom of the pot. Theron also serves as a testimony of just how good this soup is. Here he is finishing off bowl #4. You don't have to wear it to enjoy it but feel free!!

I misplaced my recipe a few years ago so here's my best guess...
Cheese Soup
Saute in 1/4 butter:
4-5 medium sized tomatoes
5 green onions
1 can of diced green chili
2 tsp salt
Add:
1 quart water
2 cups diced potatoes
Cook all above ingredients until potatoes are cooked through but not mush.
Add:
1/2 cream
2 tsp lime
Place 1/4 cup cubed mozzarella cheese in the bottom of each soup bowl. Serve soup on top of cheese...ENJOY!!

Mmmm. I'm assuming that's one can of GREEN chili. I'll try anything that has green chili in it! I love New Mexicans.
